Pizza doughs made with type 2 flour mixed with wholemeal Hemp flour, Roasted wheat flour, Multigrain flour, Venere rice flour, Spirulina, Turmeric, etc etc everything needed to offer a healthy product rich in fiber, minerals, proteins, vitamins, amino acids.
Pizzas prepared by hand using non-industrial methods with natural FreeFrom rice without gum, chemical thickeners, preservatives and colourants. We offer several gluten free dough options by mixing the rice flour with other flours, such as Hemp flour, Buckwheat flour, Turmeric and Paprika. We have a separate oven for the gluten free pizzas and a separate gluten free pizza chef.
In the near future we will offer dessert pizzas with chocolate, coffee, milk and pistachio dough.
The idea of Alternative pizzas was born out of a passion of Luigi Stamerra, the President of APP (Professional Pizza Chefs Association), for his work. Alternative pizzas were created not only because of their organoleptic characteristics, but also because each flour has its own specific characteristics. Alternative pizzas can satisfy particular needs of every customer: a celiac can have a gluten-free pizza, a vegan can try a hemp seed dough, as it is richer in proteins, vitamins, carbohydrates and polyunsaturated Omega-6 and Omega-3 fatty acids, that improve cholesterol.
Alternative pizzas are part of a healthy diet also because the flour used is biological.
Our pizzas are prepared with Mulino Valente certified flour. In order to obtain a less refined product we use type 0 flour and pay special attention to the leavening and maturation of the dough. The making process takes about 40 – 48 hours, which allows our dough to be light and highly digestible. We use such leavening agents such as sourdough, biga and poolish to make the most of the wheat as a product. Every day we offer pizzas with different types of flour, like Hemp flour, Roasted wheat flour, Multigrain flour, Venere rice flour, Spirulina, Turmeric ecc. All of them are rich in fiber, minerals, proteins, vitamins and amino acids, which are real natural food supplements.
Our gluten-free pizzas are made with rice flour, completely natural, with no additives. To offer new healthy products, we mix the rice flour with other certified gluten-free flours (like buckwheat flour, hemp seed flour) and spices (like tumeric and paprika). We have a separate oven and a separate pizza chef for gluten-free pizzas, and we can make most of our pizzas, appetizers and desserts gluten-free.
Vegan pizzas can be made both with classic and gluten-free pizza dough. We have a large selection of vegan products, including cooked ham, sausage, würstel, mozzarella and other types of cheese. We also offer various types of vegan desserts.
